You will need

2 Warburtons Gluten Free Pittas

1 large or 2 small vine tomatoes

5cm piece cucumber

1/2 green pepper

1/4 red onion

About 10 pitted kalamata olives (or other olives of your choice)

1 lemon, half for squeezing, half to cut into wedges

2 tbs olive oil

Good pinch dried oregano

Black pepper

100g feta

Method

  1. Chop the tomatoes, cucumber, green pepper and red onion and place into a bowl with the olives
  2. Squeeze over a little lemon juice. Add the olive oil and oregano, season with black pepper and stir well. (Don’t add salt as the feta is fairly salty)
  3. Crumble the feta and gently stir through the salad. Taste and add more lemon if needed
  4. Warm the pittas in the oven or grill then place on plates or a board
  5. Top the pittas with the salad and serve with extra lemon wedges to squeeze over
