You will need

1 Warburtons Gluten Free Pitta

Spices – paprika and cumin

Handful of chickpeas

50g Cubed feta cheese

4 Slices of cucumber – cut into quarters

2-3 Cherry tomatoes – halved

1 Large iceberg lettuce leaf – finely sliced

1 tablespoon Plain yoghurt

4-5 Fresh mint leaves – finely chopped

Method

  1. Coat the chickpeas in paprika and cumin, roast for 10mins in a pre-heated oven (180oC)
  2. Warm the Pitta (according to pack instructions) and slice open along its longer side (taking care as it might be hot).
  3. Mix the yogurt and mint leaves together and spread inside the Pitta.
  4. Gently mix the lettuce, cucumber, tomatoes, feta cheese and chickpeas and fill the Pitta.
  5. Serve with a refreshing glass of mint tea, couscous and extra minty yogurt on the side.
